Dinner yesterday was right out of this world. The afternoon got off to a rough start with a batch of margaritas that was truly dreadful…I made them from scratch and they were just too strong. So we switched to Corona. Laina came over with her beautiful new grandson. We wandered around the back yard a little and then eventually settled in to a terrific meal.
I used a simple dry rub of kosher salt, freshly ground pepper and brown sugar on three racks of ribs. Cut the racks in half and smoked them for about 4 hours. Made the corn using my super-secret foolproof method of boiling corn. Alex made a salad. I had made deviled eggs the night before (half without relish just for Alex). Oh…and we had those Chicago Hard Rolls from Publix. This meal more than made up for the rotten ‘ritas.
I can’t decide which I like better, though…Chicago Hard Rolls from Publix or Grapefruit Soda from Giant…I think the hard rolls win because you can put butter on them.
